Issues With The Eye of Ender

Hello again people!
There I was posting for the first time about how I was having the first problem with the playing of the game in a long time.....and here I am again!
Right, so this time, need you guys help before I start tearing my hair out.
If you recall/saw my first thread, it was about obtaining my Eye of Ender so I could locate a Stronghold. Ive had about 15 of them now (after many mid-air breakages) and found a good spot on the map where it sunk into the ground.
Ok, so on Creative mode (I tested it out just see how it all worked and what the Strongholds were like) I dig straight down where the E of E goes and viola! Im right in the middle of the Stronghold, usually in "the end" portal room.
However, I have digging straight down to lava EXACTLY where my E of E keeps dropping in about a 20 by 20 square hole..........and nothing.
I dont get it, there are multiple caves branching off from this huge straight down hole I have dug and explored them all exhaustively......and no Stronghold!!!
What has prompted to ask for help, is I was just literally standing at the bottom of this huge hole Ive dug, throwing the E of E and it just sits there right in front of me.......so I dig down and I hit lava.
No idea what to do next or whether this is some issue with them where they perhaps dont always lead you to the right place.....but I am getting mighty frustrated after putting all the time into these E of E's and then this huge hole.
Any help/suggestions/tips/previous experiences using this things would be greatly appreciated......as I said, its weird because its so easy in Creative and I find the Strongholds every time.
