Because...
It looks classic and has a nostaligia feel to it for older gamers.

Because it's its own game and you can make every single game inside of it as well. Not to mention you can find great communities when playing multiplayer which are hard to even TRY to make in other games.

Throughout most of the process of making Minecraft many years ago, millions of people have been able to watch and provide input on how it should be shaped in form from the old alpha days. Considering it was just an indie game that blew up to become what it is today, it was a comletely different twist then you saw at the time it was being made.
