I've re-downloaded the application just to make sure, but I can't open minecraft.app on my MBP running Snow Leopard. I click on it and it bounces in the dock once and then nothing. Any thoughts?
Also, I downloaded the .jar and I've been playing a bit on that, but I don't have any sound, which is annoying...
Try downloading the mac version.
You might have downloaded the wrong one by mistake D:

Minecraft.app is the mac version. It isn't running at all on Snow Leopard 10.6.4 and the Linux version runs, but is without sound and crashes every 20 minutes or so.
If minecraft is in your application folder simply put this in terminal to fix the permissions on the JavaApplicationStub (this is what is causing the problem)
chmod +x /Applications/Minecraft.app/Contents/MacOS/JavaApplicationStub
