I thought that giving no one access to my claim would mean they wouldn't be able to open my doors either. But the other day I found that people were actually able to.
I have been to other people's places where I was forbidden from opening doors (wooden) or gates, so I know it's possible.
I only want to allow people access to my front door and guest room, but prevent them from opening my back door and gates, so my livestock don't escape.
Qwerty is correct, wooden doors prevent mob access, but don't stop players. This is so that players can show people around without having to give permissions to do so. It also allows players to enter shops but still keep mobs out. Also, it doesn't mean they can edit your build.
If your big concern is that they may let mobs in while you are away, I would suggest putting a pressure plate inside so that it closes automatically behind them when they enter and will also trigger when they leave.

Gates are different. They are used for animal pens so we don't want ppl being able to grief by letting all your cows out :p

Claims don't stop people from opening wooden doors cause that would just be really annoying, where have you seen them do that? If you want doors that people can't open, use iron doors or trap doors with buttons/levers to open.
