Starting large project - Ohio Stadium

So I am looking for some advice. I will soon be starting a huge project to build a 1:1 model of the horshoe aka Ohio Stadium. I go to Ohio State University and plan to have 3-5 of my friends help me out on this one. We currently have our own server and we are using the software fcraft which seems to be a bit limited... we have yet to figure out how to do things such as fly or doors.
I guess I am just looking for suggestions of how to go about this. Can we do it on our own server using fcraft efficiently? Should we switch to something with a nice fly command? Is there a good way to blueprint the stadium?
