Is anyone else doing them? Cause I sure am. It's kinda time consuming though. You have to find a lake or ocean that's deep enough first. them you have to use dirt to remove all the water to make a 7 by 7 room that's around 8 or so blocks tall. then you gotta plant the mushroom and bonemeal it. after that remove the dirt walls to flood the area. That's the basics at least.

Inside the mushroom you need to set down a floor. I used glass. Anyways it's probably best to remove the center stem inside of the actual mushroom. As for getting in I suggest leaving one floor block missing and using a ladder. I'm still working on it so I'm going to see if trap doors work.

The mushrooms I have right now aren't that good. They need a lot of space to become tall. I might update if I succeed in making these things better But as it stands the lake wasn't near deep enough. I took a few screencaps and if you want you can check them out here.
