So basicly I want to join a server that actually allows me to create a world, not one where whatever I build instantly disappears, or what I destroy respawns. any servers like that?

This site's server, World of Minecraft: Realms. When you log on, just type
/home
and it will take you to your own world where you can build whatever.
Remember to type /member if you want to start gaining ranks and /rules so that you don't start any trouble.
