I spent several hours on the biggest project I have so far attempted, and because of things like high ceilings etc. I got the World of Minecraft Client Wrapper so I could use the flying hack, added a bit more to my building, saved, and when I reloaded it just generated a new map, wiping my old "saved" one.
I checked using the browser version and it again just generated a new level.
While I'm not so optimistic as to hope for a recovery of my level, I would like to know if I can prevent this from happening in future?
Also, why does it say "A special thanks goes out to: TheGabe" at the top of my screen.

"A special thanks goes out to: TheGabe" is a gag. it says "A special thanks goes out to: %user logged in%" and it just replaces based on who is logged in
I can feel your pain. I really do. I too was a victim of this.
This is why I have a private server that auto-saves every minute.
I'm still waiting for the day when the Client Wrapper will be updated so we can save normally again. Then I can ditch this server.

Can't the Client Wrapper's saving option be changed to offline saving? Notch gave us that option.
Yeah I read that the free accounts' online saving was disabled, but I don't have a free account so I dunno.

That's got nothing to do with the client wrapper, that's up to the version of the minecraft.jar that you're using. The new minecraft.jar (which I don't distribute, you have to download it ) has the local level saving feature. If you want that functionality, you'll need to install it from minecraft.net.

Sorry to be the bearer of bad news TheGabe but the World of Minecraft client wrapper is not responsible for the loss of your work.
As part of some recent changes made by Notch to the Minecraft program, online saving of maps has been disabled owing to a lack of free hard disk space (http://notch.tumblr.com/post/239361671/minor-client-updates).
This is why you were getting a new random map each time you reloaded instead of the map you previously 'saved'. Existing saves should still work as long as you don't save any changes to them.
The other option is to use the Dump Level option within the World of Minecraft Client Wrapper to save a copy of your map to a file and then use the Level Manager software available at this address (http://www.minecraftforum.net/viewtopic.php?id=2508) to reupload your map again later so you can continue to work on it.
If you use this method remember to use the Dump Level option to save your work first or it will disappear when you close Minecraft.
